Roasting Guide · Caffeine

Does Roast Level Change Caffeine?

A clear answer to a common café question: how roast level affects caffeine, and what actually changes the caffeine in your cup.

  • Short answer
  • Weight vs scoop
  • What really matters
Light, medium and dark roast beans with equal caffeine bars
Quick answer

Does dark roast have less caffeine than light roast?

Not by much. Caffeine is stable at roasting temperatures, so light and dark roasts have similar caffeine by weight. Dark beans are lighter and less dense, so a scoop of dark roast can contain slightly less caffeine than a scoop of light, but dose, brew method and species (Robusta has about twice Arabica’s caffeine) matter far more.

01

The short answer

Roasting changes colour, flavour and weight, but caffeine is quite stable at roasting temperatures. So the caffeine in a light roast and a dark roast of the same coffee is similar by weight. The idea that dark roast is “stronger” comes from its bold, bitter, smoky taste, not from more caffeine. This is general information, not medical advice.

02

Weight vs scoop: why people disagree

Beans lose water and mass as they roast and expand in size. A dark roast is lighter and less dense than a light roast of the same bean. That gives two outcomes:

Light vs dark roast caffeine (general tendencies)
MeasureLight roastDark roast
Caffeine by weight (per gram)About the sameAbout the same
Beans per scoop (by volume)Slightly more mass per scoopSlightly less mass per scoop
Caffeine per scoopSlightly higherSlightly lower
Perceived strengthBrighter, more acidicBolder, more bitter

Measuring coffee by weight removes the difference.

03

What actually changes caffeine in the cup

  • Species: Robusta has roughly double the caffeine of Arabica. See Arabica vs Robusta and caffeine content.
  • Dose: how many grams of coffee you use.
  • Brew method and ratio: immersion, grind size, contact time and water volume change extraction.
  • Serving size: a large latte may contain more caffeine than a single espresso.
  • Blend: adding Robusta raises caffeine. See how to roast Robusta.
04

What roast level does change

Roast level shifts acidity, sweetness, body and bitterness. See roasting levels, coffee roasting stages and light vs dark roast. Choose roast for flavour, and choose species, dose and size to manage caffeine.

05

Talking to customers and health notes

Say plainly: roast level mostly changes flavour, not caffeine. People sensitive to caffeine should check dose and species. For general health information see health benefits and Arabica vs Robusta health, and encourage guests with health conditions to ask a healthcare professional.
