What is degassing?
During roasting, carbon dioxide forms inside the beans. After roasting, the beans slowly release it. This is degassing. Lots of gas in the first days can push water away during brewing and make extraction uneven, especially in espresso, where it also affects crema and shot flow.
How long to rest roasted coffee
| Brew method | Typical rest | Why |
|---|---|---|
| Espresso | Around 5–10 days, sometimes more | More gas escapes; shots become steadier |
| Filter, pour-over | Around 3–7 days | Gas settles; flavour opens up |
| Cupping samples | About 8–24 hours | Fast, comparable evaluation |
Darker roasts degas faster than lighter roasts, and dense coffees can take longer. Taste a bag over several days to find your peak. See sample roasting for cupping.
How long does roasted coffee stay fresh?
Aromas fade as the coffee ages and oxidises. Many roasters aim to use whole beans within a few weeks of roasting, and freshness drops faster once the bag is opened or the beans are ground. Heat, light, oxygen and humidity all speed up staling. See storage tips for green coffee storage principles that also apply to roasted coffee.
Packaging roasted coffee
- One-way valve bags: let gas out while keeping air out.
- Nitrogen flush or foil bags: extend freshness.
- Keep sealed and cool, away from light and moisture.
- Date every bag with the roast date, not only a best-before date.
See packaging options for green coffee bag types.
Resting and your profile
A lighter, shorter-development roast often needs more rest than a darker one. If coffee tastes harsh or sharp in the first days, rest it longer before judging the profile. See roast profiles explained and espresso roast vs filter roast.
FAQ: Resting roasted coffee
Why does coffee need to rest after roasting?
It releases carbon dioxide, which can disturb extraction and flavour in the first days.
How long should espresso rest?
Often around 5–10 days, depending on roast and taste.
Can I brew coffee the day it is roasted?
You can, but it may taste sharp or uneven and make poor espresso. Rest it a few days.
How long does roasted coffee stay fresh?
Many roasters aim for use within a few weeks of roasting; whole beans stay fresher than ground.
Do dark roasts need less rest?
Typically yes; they degas faster than light roasts.
What does a one-way valve do?
Lets gas escape while blocking oxygen from entering the bag.
Should I freeze roasted coffee?
Practice varies. If you do, use airtight packaging and avoid repeated thawing.
Where do I buy green coffee to roast?
Scofi supplies green Arabica and Robusta from local stock. See how to buy.
