The Ethiopia CM Worka is harvested from the Worka Village, Gedeb District, Gedeo Zone of the Yirgacheffe region and is located approximately 485km from Addis Ababa, the capital of Ethiopia.
The cherries are fermented in big, special tanks for 10 days while slowly injecting CO2 into the tank to control the temperature within. Subsequently, the cherries are dried in a thin layer on raised African beds with a shade covering for 3 - 4 weeks until the moisture level reaches 11%.
