Among Costa Rica's coffee processing methods, the black honey process is the most complex, labor-intensive, and expensive. It earns its name because it undergoes a lengthy fermentation period and occupies drying beds for twice as long as its counterparts, the yellow and red honey processes. The black honey beans take a patient 15 days to dry, during which they are covered by a black plastic tarp while resting on raised African-style beds.
