Sourced from various small farm around Huila lush green hill. The ripen cherries are hanpicked and sealed in an airtight tank. The sealed tank create an anaerobic environment which lack of oxygen, allow microorganism like enzymes, yeast, and bacteria to dominate the fermentation.
Fermentation last about 48 hours in the tank and temperature is controlled every 6 hours so it won't reach above 30°C. It is then shifted to raise bed, laid in thin layer and dried as natural. Pink Bourbon a hybrid of yellow and red bourbon combine with high concentration of sugar from anaerobic fermentation has given the cup more intense notes, complex and silky mouthfeel.
