Peru Geisha Black Honey is harvested at 23 degrees brits. Harvested coffee cherries undergo a flotation process using clean spring water to separate dry beans, leaves, and sticks. The selected coffee cherries are pulped dry to retain the mucilage. After pulping, the coffee undergoes a drying process under shade for 3 to 4 days on African beds.
Following the shaded drying, the coffee is uncovered and dried at a temperature not exceeding 24°C for an average of 20 to 25 days. The coffee undergoes continuous movement 3 to 4 times a day to ensure uniform drying. When the coffee reaches a humidity level of 11.5%, it is collected in jute bags with GrainPro bags for storage.
