Honey processing involves removing the outer skin (pulp) of the coffee cherry, but leaving the sticky mucilage layer intact on the beans instead of washing away. The beans are then dried either on sun-drenched patios or African-style beds, facilitating the gradual development of the mucilage's inherent sugars and contributing to a distinctively sweet flavour profile.
