🌿About Rancho Grande:
Farm background: Coffee production began at Rancho Grande Farm in 1933 by Mr Aneite Reis. Today, the farm is run by the son and grandson of Mr Aneite Reis which produces coffee responsibly and sustainably to both the environment and people. Several employees live on the farm in houses provided with subsidized electricity and food. The farm also has many cows for dairy and meat production. The farmers are open to change and trying new techniques, they invest in several static drying boxes to improve the production from growing, picking, and post-harvest environments.
Processing method: Once the coffees have been mechanically harvested, ripe cherries are separated using density and then put into the static drying boxes. Static drying boxes are 1m deep boxes with a capacity for 15000 litre volume of cherries The boxes have a vented grill at the bottom to allow air circulation from below up through the drying coffee. The coffee is slowly dried for 11 days at a temperature of 35°C until 11.6% moisture content. The coffee is then left to rest for 26 days and stabilise losing a little more moisture to below 11% before it is milled. This method allowed the production of more fruity and prominent profiles than usual profiles associated with Brazil's natural coffee.
