What is "Red Honey" ?

❖ During the harvest season, farmers carefully handpick ripened cherries.

❖ Outer skin is pulped from the cherry, exposing a mucilage layer. This sticky substance contains sugar and acids.

❖ Red Honey processed coffee - typically dried with approximately half of its mucilage left intact on the beans

❖ Differentiation: the amount of light and drying time the beans are exposed to. Red honey processed is usually dried under shade to elongate the drying period.
